ON THIS WEEK’S episode of Dinner SOS, test kitchen director and host Chris Morocco is joined by Dan Pashman, the host of The Sporkful podcast, to answer our listeners’ cooking questions.

You might also know Dan from the pasta shape he developed with the brand Sfoglini—Cascatelli by Sporkful—which Chris’s 11-year-old son claims is the best pasta he’s ever had. In case you’ve ever been curious what goes into inventing a new pasta shape, you can listen to “Mission: imPASTAble” to hear about Dan’s three-year quest. Dan is also releasing a pasta cookbook this month titled Anything’s Pastable: 81 Inventive Pasta Recipes for Saucy People and comes well-equipped to answer callers’ most pressing pasta dilemmas.

They discuss how to successfully cook pasta for a crowd (Chris and Dan both suggest baked pasta dishes like cannelloni or lasagna), which cuts of meat are the best value (Chris shares his love of quality ground meat), and their favorite winter produce. Dan also teases some recipes from his upcoming book like kimchi carbonara, a baked cauliflower mac and cheese, and spinach artichoke dip lasagna pinwheels.
