ON THIS WEEK’S episode of Dinner SOS, test kitchen director and host Chris Morocco is joined by senior test kitchen editor Shilpa Uskokovic to chat about summer cooking and how to take advantage of the abundant produce at greenmarkets.
Shilpa chats about her newest recipe for Basil Chicken Stir-Fry for the relaunch of Bon Appétit’s Feel Good Food Plan, when each month a new staffer will take over the column and present a recipe that makes them feel nourished. In her stir-fry, perfectly timed for summer, Shilpa uses a big bunch of basil, which concentrates in flavor as it cooks alongside the chicken.
Then Chris and Shilpa open the mailbag of listener questions. They make suggestions for how to jazz up CSA vegetables (Shilpa says to make a fun sauce on the side like in this Grilled Squash With Nuoc Cham Chimichurri or Chris’s Tahini Ranch) and quick weeknight grilling recipes that aren’t chicken (Shilpa loves this Grilled Party Salmon with Green Romesco and Chris gives the idea for Bulgogi Tofu Burgers or Shilpa’s very own Honey Brushed Steaks with Peppers and Onions).
Listen now to hear more tips, from what to do with a two pound tub of jaggery (Chris loves it simmered down with water and used as a sweet syrup in lemonade or margaritas) to ways of achieving super tender and juicy chicken (you might be surprised to find that soda works shockingly well here).
